BRY-97 American West Coast Yeast was selected from the Siebel Institute Culture Collection and is used by a number of commercial breweries to produce different types of ale.

  • Quick start and vigorous fermentation, which can be completed in 4 days above 17 °C.

  • Medium to high attenuation.
  • BRY-97 American West Coast Yeast is a flocculent strain. Settling can be promoted by cooling and use of fining agents and isinglass.
  • The aroma is slightly estery, almost neutral and does not display malodours when properly handled. It may tend, because of flocculation, to slightly reduce hop bitter levels
  • Best when used at traditional ale temperatures after re-hydration in the recommended manner.

    4 of 5 Good yeast but requires patience February 10, 2018

    This was the 2nd time around using this yeast.  The first time I had issues with it using cooler temperatures (64F) and it never really took off until I warmed the fermenter to 69F.  This time, based on feedback from others, I left it alone and after 48 hours of lag time at 64F, it took off and was in active fermentation for a full 5 days.  I used this for an Irish Dry Stout as an alternative to liquid Irish ale yeast and I am happy with the results.  This store has the best dry yeast prices with the lowest shipping costs of any of the online retailers or brick and mortar stores I looked at.
